At Style this means luxurious winter interiors, fashion, and excitement on the ski fields, as well as a good excuse to seek out cosy new hot spots around the city. In this issue, I speak with Phil Keoghan, one of New Zealand’s most highprofile celebrities and action men (pg. 16). Phil is in Christchurch promoting his film Le Ride, which will have its world premiere at the New Zealand Film Festival at the end of the month. I also had the opportunity to speak with Caleb Nott from Broods – another hugely talented Kiwi, who is making big waves on the international music scene (pg. 12). We take a sneak peek inside a stunning Parkbridge apartment and get a taste for living the simple, yet luxurious, life. We also showcase the complex’s newly finished pool house, designed by Warren and Mahoney (pg. 20). With Broods’ Caleb Nott

Broods is a Nelson-born, brother-sister music duo steadily rising to stardom. Performing on July 14th, this is Christchurch’s chance to experience Georgia Nott (lead vocals) and older brother Caleb Nott (production and backing vocals) on stage. Victoria Tait speaks with Caleb about music, inspiration, and fame.

This brother and sister team have music in their blood. From a young age, Georgia and Caleb Nott performed with their parents at wedding and church performances in an ABBA tribute band. However, it was at the 2011 Smokefreerockquest that their musical career took flight, after gaining the attention of judge Joel Little (producer of Lorde’s 2013 hit single Royals). Two years later, they released debut single Bridges – which MTV described as “a bittersweet synth-pop echo chamber” – and were signed to Capitol Records. Now based in LA, the pair have produced second album Conscious (June 24), and are on tour in New Zealand this month. How do you describe your music? In one sentence, I guess I would describe it as beat-driven emotional pop. What creative process do you go through when songwriting? We don’t have one particular process or formula that we follow; it’s different every time we go into the studio. Sometimes we will start with just a beat, and then sometimes we start with some of Georgia’s lyrics and build from there. It also depends on who we are writing with and what works for everyone.

What can we expect from your new album? The biggest difference in this album is the energy. Everything is bigger and more thought-out, hence that name Conscious. Also, it’s more diverse and covers a wide range of themes because it was written over a much longer time frame than Evergreen. We went through different life experiences, and our influences were constantly changing. Conscious includes a collaboration with Lorde, who I believe has been very supportive of your music. Can you tell us more about that? Ella was very easy to write with; sometimes you just have those sessions where everyone gels, and that’s when the magic happens. We were just all in Auckland at the same time and thought we should do some writing together, so we did! What is your impression of the New Zealand music industry? Do you think we are developing a particular style and sound? The New Zealand music industry is one of the most supportive in the world, I think. Our country goes out there and punches above its weight every year, and I think it’s something that’s only getting stronger. The world is only just starting to feel our

presence. With everything being online the world has this access to what we do now. I don’t think there is a certain New Zealand sound so much as a genuine sincerity in the music we make. There is no bulls**t here, everyone in New Zealand writes about real stuff, none of this “drop it low in da club” crap that has saturated so much of the pop market recently. I think that’s what people find so refreshing about what we do down here. You have already achieved so much, including opening for Ellie Goulding. What is your most desired goal? I think our only goal is to work as hard as we can, and try and keep evolving and developing as writers and performers. Our other main goal when we started this project was longevity, which is a lot harder to achieve these days. You see a lot of bands come and go very quickly; it’s a very competitive industry. Who inspires you? Our inspirations are always changing, but we do have some influences that will always stick around. My ongoing inspiration is probably Danger Mouse and Radiohead, and Georgia will always admire Bat for Lashes.

No oPPortuNity wasted Phil Keoghan is one of New Zealand’s most high-profile international celebrities, best known as the host of The Amazing Race. He tells Victoria Tait about his epic journey to film Le Ride and his list of things to do before he dies.

Born in Lincoln, Christchurch, and an ex-St Andrew’s College student, Phil Keoghan has always maintained a strong connection to Christchurch. After the February 2011 earthquake, he returned home to record segments for American morning television programme The Early Show to help raise funds for the New Zealand Red Cross and also promote tourism in Christchurch. His career started at the age of 19, with his first on-screen role for children’s show Spot On, filmed in Dunedin and Christchurch. He went on to further television roles, including reporting for TV series That’s Fairly Interesting – alongside Tim Shadbolt, Neil Roberts, Sue Kedgley and Phil Gifford. With stars in his eyes and a natural on-screen presence, he moved overseas to extend his opportunities and, today, has worked in more than 100 countries as a television host, producer, writer, and cameraman. Phil has won numerous awards for his work, including 10 Emmy Awards (of 17 nominations), all for The Amazing Race as a producer and a host. In 2012, he was recognised as one of six “Emerging Leaders” during the Sir Peter Blake Leadership Awards, for his support of the Christchurch earthquake relief and funds raised for multiple sclerosis. In 2014, he was made a Member of the New Zealand Order of Merit for his services as a television presenter and to tourism. Phil is also a published writer, releasing No Opportunity Wasted: 8 Ways To Create A List For The Life You Want (2004). This is man who plans to live his life to the fullest, and with a strong sense of adventure has already broken a world bungee jumping record, gone diving in the world’s

longest underwater caves, eaten a meal on top of an erupting volcano, and renewed his vows under the sea while feeding sharks. In 2009, Phil took part in Ride Across America, a bike race in which participants clock up more than 4800km as they travel from Los Angeles to New York. Stopping at 39 cities, the course is described as being 30 per cent longer than the Tour de France. Phil’s efforts were driven by his ongoing commitment to raising funds for multiple sclerosis research. To further boost the profile of his efforts, he set himself the goal of completing the race in 40 days, which meant160km per day. Not only did he conquer another challenge, he helped raise more than $637,000 (USD $450,000). Four years later, Phil donned his cycle gear one more, this time in France. With his friend Ben Cornell, they recreated the original route of the 1928 Tour de France. Averaging 240km a day, for 26 days, Phil and Ben traversed both the unforgiving mountains and the Western Alps, on original vintage steel bikes, without gears and marginal brakes. A documentary, Le Ride, was made simultaneously, primarily to raise the profile of New Zealand champion biker Harry Watson, also originally from Christchurch. Harry Watson was part of the first English-speaking team to take on the Tour de France. What was it about Harry Watson’s story that inspired you to embark on 1928 race route, 85 years later? Harry Watson was a cycling champion from New Zealand and yet hardly anyone has heard of him. If he was an All Black he would be considered a hero. To take a six-week journey by sea to France and take on the world’s best in what is arguably the toughest sporting event in 1928, on roads that were not sealed, riding an average of 150 miles [80km] a day is incredible. When they arrived they learned that the six riders promised to them to complete their team were not available, so they had to race as a team of four against teams of 10. I was so blown away by this untold story that I was inspired to do a documentary about Harry Watson and attempt to recreate the 1928 Tour de France route. What can people expect from the subsequent film, Le Ride? I hope the audience will appreciate what these brave riders from Down Under endured day after day. That they embarked on this gruelling journey without seeking recognition and just got on with it. In an era where everything is announced on social media, it’s incredible to

think Harry went looking for adventure and then returned to his job as if nothing happened. He did not seek fame or fortune. I bet if you mentioned Harry Watson’s name to anyone you would be met with a questioning look. I had never heard of him either and now I hope his name is never forgotten. How did you physically prepare for this ride? Especially as you were attempting this on a vintage steel bike without gears? The 1928 bike was not ready to ride until a week or so before the actual ride around France so I had to train on my regular bike, which weighs about 17 pounds [7.5kg]. The 1928 bike weighs twice as much and has no gears. The biggest challenge was riding for hours and hours without cracking mentally. Some of the days were 200 miles [320km] and I had to prepare my head for that.

Did the one bike last the distance? Ha – you will have to see Le Ride to find out. Did you ever thing you wouldn’t make it? When I thought I couldn’t go on I thought of Harry and his team! We had better nutrition and better roads and we had a support team. It was punishing enough for us, but every time I thought of Harry, I was able to push on. What made you choose to donate funds from Ride Across America to multiple sclerosis research? My producing partner and wife, Louise, and I used to sponsor an under-23 cycling team in the US and a professional women’s cycling team. Initially we were approached by an existing cycling team who supported MS and we decided to continue the association. It wasn’t long before we met so many people affected by MS and realised that we could do a lot to raise funds for research. So, we helped raise over a million dollars for MS. It seemed appropriate that we continued our support with our film. I believe you have a list of things to do before you die, what’s left? Focus on making this world a better place. My list is less about my personal goals now and more about how I can contribute to improving the lives of others. Whatever that takes I will stick on my list.

Who would you choose as a companion to compete in The Amazing Race? Maybe my daughter Elle. She is smart and tough and an athlete. We might argue a bit as we are both stubborn, but she would get the job done! Having travelled to more than 100 countries with The Amazing Race, is there an experience or country that has had a huge impact on you? India is always mind-blowing. Such a colourful and vibrant country. I think everyone should try and visit India. It’s hard to put into words, so just go if you can. What is your greatest achievement? Being a father and good husband. I have a great family and every day I appreciate my wife and daughter. I’m sure it’s not easy for them with me travelling so much, but we have a lot of quality time together when I’m home. Lots of adventures!

The impetus for living in what many New Zealanders would call non-conventional spaces is often born from circumstance or inspiration from others. For Gowan and Glenda Pickering the motivation to live in the Parkbridge apartment opposite Hagley Park was brought on by these very things. Gowan’s job at IBM saw the couple travel the globe – New York, Tokyo, Hong Kong and Jakarta were all destinations they called home for periods of time. This meant when they returned to New Zealand they wanted to replicate the easy lifestyle they had become familiar with, far from the conventional quarter-acre section many New Zealanders aspire to have. “We had become accustomed to apartment living. I like that we can lock this place up and go away and don’t have to worry. We have a beautiful garden but don’t have to do any

of the work, a pool, and underground parking, so we’re dry in all weathers. It’s a really simple way to live,” says Glenda. For the past five years the couple has resided in their 275sqm property overlooking Hagley Park. Although on what many would call a busy corner of central Christchurch, the traffic noise is minimal and the clever original design by Sir Miles Warren means the hedge conceals Park Terrace and the park becomes a continuation of the beautiful traditional gardens. The three-bedroom, two-bathroom residence is a statement in how nothing need be compromised when creating collective living. Wide halls, spacious bathrooms and sizeable bedrooms make sure this is a luxurious place to call home. The living space is a long double-aspect room, which encompasses the formal lounge, dining and more informal sitting area with the kitchen just off to the side. Glenda has cleverly created different rooms within this long space by using a darker colour at either end to almost shorten the room. The interior is a testament to the global life they have lived, with treasures adorning walls and side tables – many with an Asian influence (though Glenda admits she is now trying to cull her bits and pieces as she continues to make life even easier). In the master bedroom suite the voluminous space is enhanced with shimmer and light from the wallpaper and soft furnishings. In the early morning, the couple sits on the east side of the building with the sun streaming in as they enjoy reading the paper. The balcony is just the place to sit on a summer’s evening and watch the world go by, says Glenda. “I love it here because the view is ever-changing. We watch mums push prams, runners and the different seasons in the park. You are never lonely because there are people always around and nobody can see in.” Unfortunately, in the February 2011 earthquake, the apartment block was affected by the grounds dropping 300mm. The two historic buildings, Fleming House and McKellar House, which the apartment block was originally designed around, were deemed unrepairable.

Residents have moved out one by one as the apartment remediation work was undertaken. Gowan and Glenda’s home was the first to undergo repairs, overseen by Warren and Mahoney architect Guy Evans and undertaken by Summitbuild. Also impacted was the pool house, a communal swimming area frequented by inhabitants throughout the year. Guy was tasked with the redesign of this building, too, taking into account the needs of the body corporate as well as the surrounds. “The design brief was to put it back but reconfigure a few things. One of them was to open up to a new barbecue area.” This recreational area includes a pool, changing room and outdoor entertaining space. The terracotta tiled roof was replaced with copper to compliment the surrounding buildings, and this lighter weight covering offered more flexibility in the pool house design. The exterior wall, which curls around the whole apartment development, was inspiration for the new curved roofline and glass wall of the pool enclosure. The interior gabled ceiling with its stern off-centre steel work creates an interesting juxtaposition. Guy was inspired by artist James Turrell who specialises in light and space workss. The vivid blue light that provides a bright hue in the pool is a nod to his work. The blue tiled wall at the end of the pool gives depth and provides a contrast to the otherwise pale décor. It is here residents come for fun or physical fitness and where they can indeed bask in the joy of knowing they have made their lives less complicated in a luxurious setting.

International furniture fairs have been taking place all around the world over the past months – in Milan, New York, Sydney, London, and Copenhagen. These are the shows that define the future trends in furniture, lighting, colour, and design at large. This year there is a definite interest and excitement around “exceptionally crafted” and “intelligently designed” products. In other words, products that are not only beautiful to look at, but are made with integrity, and honour the materials from which they are made. One brand paving the way in this area is Italianbased, family-run Mattiazzi. Brothers Nevio and Fabiano Mattiazzi founded the company in 1979. Their network of wood shops is so diverse they could support any manufacturing process the brand may need. At the other end of the scale, larger brands have been creating louder, more ‘out of the box’ stands at these events. At the Salon de Mobile in Milan this year, rather than a traditional stand with furniture and lighting on display, Tom Dixon instead presented ‘The Restaurant’ – a fully operating restaurant. Waitresses served incredible food on Tom Dixon homeware pieces while clients and customers dined upon and amidst the lighting and furniture pieces they were releasing. It was a brilliant way to get people immersed in the collections and to see the products in use – it became the place to go and was easily one of the must-see events. The evening entertainment at The Restaurant was provided by the designer himself, Tom Dixon, with his band performing to a packed-out crowd. Furniture Buying guide Buying new furniture in no easy task. Whether it’s hunting for a statement piece or undergoing a complete overhaul, there is a lot to consider. Before you get lost in the millions of shapes and fabrics available, and lose sight of what you are looking for in the first place, ask yourself these questions.

Do you have an understanding of the size of your space? If not, get the tape measure out, measure twice and draw up a plan no matter how amateur. Nothing looks worse in a room than over- or under-sized furniture. A scaled plan will also keep your wallet in check as you will shop with the restraint of dimensions.

Do you know the colour scheme that works best within your space? Blacks and greys may be on trend now, but can dramatically close in a space. When I travelled to the UK and Europe in my early twenties, I was surprised to find how warm the homes were that utilised central heating and radiators. I don’t understand why, in New Zealand, we think we have to freeze indoors throughout the winter, and why our heating systems seem more compatible with an Australian climate than the realistic subzero mornings we experience here in the south. Thankfully, this school of thought is slowly changing, and homeowners are looking to more efficient central heating systems. Radiators are becoming more commonly used, and what follows is a breakdown of some relevant facts.

Pros » Radiators create an even temperature within the home, thus, in turn, create a healthy environment. » Each radiator is warm to touch but won’t burn, making this a safe option for children, the elderly and pets. For extra safety there are also low-surface temperature models available. » They can be controlled by a thermostat and timer to ensure your home is warm when you need it to be. This also saves on energy when you are not home. » Modern, stylish options are available and can create a feature for the room. Or, disguise radiators by selecting them in your wall colour.

How do tHey work? A boiler (generally located in the garage or laundry) heats the water through a series of pipes that pump the warm water out to the radiators. The water returns to the boiler for heating and continues its cycle. The temperature of individual rooms is controlled through valves on each heating radiator.

Cons » There needs to be sufficient under-floor space for installing and running the piping. » Finding enough clear wall space for radiators can be tricky. (Though, they do come in a range of sizes.) » If installing within an existing home, the process can be disruptive and expensive.

Chelsea Landscape architect Craig Wilson takes us through the top trends from the UK’s RHS Chelsea Flower Show.

It would be hard to argue there’s a more influential event on the international garden design calendar than the Royal Horticultural Society Chelsea Flower Show. The 2016 event was no exception, and now is a good chance to catch up on what was trending and what ideas could be applied to our Antipodean gardening and landscape context. Commentators have pointed out the following design elements as key markers of the 2016 Chelsea garden aesthetic. Large rocks were used to create both structure and feature in many display gardens. This was in both natural and altered forms, and included a 44-tonne granite cube – with an almost completely hidden internal rejuvenating woodland – in the ‘M & G garden’ by Cleve West. Catherine McDonald used large, perfectly rounded smooth stones in the middle of her ‘Hartley Botanic Garden’ to contrast her selected delicate perennials. Many of the designers employed the trusted use of clipped evergreens to create a link between the built structure of the displays and the often naturalistic plantings. An element of formality was also noted with the use of ‘pleaching’ (entwining branches to form a hedge) to elevate the clipped forms and create strongly defined spaces. Garden sculpture was used in many displays to great effect. While looking amazing, it is hard to surpass the ability of a wellcrafted garden sculpture to communicate its artist’s message and elicit an emotional response in the viewer. John Everiss in the ‘Meningitis Now Futures Garden’ beautifully creates a sense of empathy for sufferers of the disease by depicting a wooden figure caught in the middle of a stone wall trying to break free. Responsible plant selections were also well represented with an ‘arid’, low-water garden, which took out Best in Show. ‘The Telegraph Garden’, designed by Andy Sturgeon, made reference to geological processes, climate change and the possibility of garden design being responsive to the environment.

This month we will consider how quality landscaping can add significant value to your property. Landscaping is the shopfront of your property, it immediately creates an impression before your home is entered and adds significant value through street appeal. Involving a landscape architect from the outset will help you formulate a vision for your project. Compared with architecture, landscaping can easily be undertaken in stages as time and budget permits. Making an initial investment in a master plan will allow the landscaping to evolve cohesively. A piecemeal approach can detract from the overall impact - likewise undertaking the entire landscaping cheaply ‘in one go’ can diminish the aesthetics of your landscaping. The old adage ‘you get what you pay for’ holds true for landscape architecture. If the landscaping is cut-price, there have probably been corners cut along the way which will affect quality and longevity. The workmanship, materials and finishes won’t be on par with the services of a reputable landscape architect. Inferior materials which are unsuited to harsh Canterbury weather conditions will not last. Ensuring your landscaping is completed to a high standard prevents wasting time and money having to remediate landscaping failures. Obviously landscaping is the last step in a total build project. Unfortunately this often means landscaping can bear the brunt of any building budgetary blow outs. It is vital to ensure the landscaping budget compliments the investment expended on the architecture of the home so the efforts on your home aren’t degraded by bargain landscaping thrown in as an afterthought. As a rule of thumb, expending 10% of the value of your property on landscaping will provide the very minimum - basic plantings, a lawn with batten edging- and probably no hardscaping or structures. 15% of the value of your property is a middle ground budget- whereas spending 20% of the value of your property will result in high end quality landscaping which will compliment and accentuate your home and maximise your outdoor living potential.

THe anZ CenTre Previously the site of the Triangle Centre, the new AnZ Centre is a sophisticated three-level structure diagonally opposite ballantynes. The ground-level area is available for shopping and hospitality, while commercial offices occupy the three large upper floors. The most striking feature is an atrium with a cascading glass roof. Tenants include AnZ, beca and – in a new concept store – Hallensteins and glassons. Town Hall Over the next few years, the Christchurch Town Hall in Kilmore Street is being brought back to life. Restoration is underway, with the initial strengthening of the structure by way of ‘jet grouting’. This process will see 1000 large concrete piles injected eight metres into the ground using machines specifically imported from germany. With $127.5 million in the budget, the Town Hall is set to stand again in glory come 2018.

Emotional versus LOGICAL Purchases

I’m often party to conversations that reaffirm the power of emotion when purchasing property and every day I’m reminded of the enormous significance emotion plays in the sales process. In fact, real estate marketing, sales and activity places constant emphasis on igniting an emotional response in purchasers. Warmth, smell, colour, presentation, street appeal and texture are all emotional elements that a sales consultant should consider when going to the market with any listing. We’re taught our words and photos (and now video too) should “sell the sizzle, not the sausage”, and I’m always a fan of highlighting benefits for consumers rather than blandly listing a set of facts or statistics. Sure, that property may have four bedrooms and two bathrooms, but nowadays most properties do, so encouraging a hot-button response takes more than a brief set of

bullet points. I guess the flipside to this is rhetoric that’s so contrived or lofty it bears little relevance to the subject property and the reader of the advertisement is so bored they switch off. I’ve also found an emotional purchase doesn’t have to make sense to anyone but the purchaser – and sometimes it really doesn’t seem to make sense to anyone else! I’ve seen families buy properties that would have provided some real accommodation challenges. One purchase was triggered by one of the parties falling in love with the garden and envisaging family weddings taking place (albeit in 20 plus years) and nothing could shift her from that purchase. Logic had no place in this deeply emotional buy, much as it had no place in the purchase of a property by two frail and ageing clients who decided on a home with multiple flights of narrow stairs, but a view you could only dream of. On the face of it, it didn’t make sense, but who am I or any of us to judge? So it’s fair to say emotion will always play a part in the world of real estate, but the other big player is its nemesis, logic.

Emotional purchasers who look for an investment property hoping for a great future gain can often be disappointed when the amount of money they put into fixing it up or on chattels to furnish it eats up any future profit. It doesn’t make sense to buy the most expensive and beautiful curtains only to find a new purchaser cares little for your taste or your ‘need’ to get back every cent you spent on them. It seems like common sense, but emotion and logic can collide like that. Great realtors are often great communicators that can assist a logical analytical purchaser brilliantly but also guide an emotional buyer in their choices. I’m always deeply emotional about buying a family home and tough on potential investment purchases. I guess you could say there’s room for a foot in both camps and a world of choice. Make good ones! In the meantime, keep warm and enjoy your home.

Drawing in the

Countryside Anne Hudson explores how artist Kate Calder expresses the beauty of the country.

Kate Calder delights us with detailed drawings inspired by the beautiful countryside in which she lives. Be it a bird’s nest filled with eggs, a hare, a bee or dragonfly, her drawings are exquisite. Through detailed observation of her subject and careful composition Calder produces outstanding work. She does not come from an art school background, but has studied under New Zealand artist Ben Woolcombe, and has spent time refining her own technique. Painting since high school, it was the fouryear sojourn in the Mackenzie Country – with its unique colour and the grandeur of the landscape – that markedly influenced her work. Often we ask or proclaim that anyone can learn to draw. Is it not a skill acquired with practice? To some extent this may be

true. Certainly those with a trained eye and a knowledge of perspective can produce very accurate renditions, but is it art? There is plenty of debate on the source of talent, from DNA, 10,000 hours of practice, to reincarnation. I think Calder comes from the school of natural talent. No doubt her upbringing, love of drawing and the hours she has applied herself to her craft have helped, but her work has a freshness and authenticity that a natural response to the subject can only be the source. There is artistic licence in her work and her own interpretation of the object. She lives in the countryside, works in the countryside and is a keen observer of her surroundings. Calder uses the environment and her drawing to give us a glimpse of her life; she invites us to see things as she

does. The hare, bee and dragonfly all have a special place in the environment fulfilling their own important role alongside us. Calder now lives outside Waikari with her husband and three children. She maintained her interest in art while running a busy café-cum-gallery but had little time to paint then. Now she enjoys farming and painting on a regular basis. She has exhibited at the Merivale Fine Arts, the Augustine Gallery and Art In A Garden, as well as at other private exhibitions. Calder is one of many countrywomen who, despite the hard work and sometimes isolation of their lifestyle, has found an added income and an added vocation, providing a source from which to enrich their own lives and that of their famil. Her work would adorn any home, of any style, with confidence.

Known as the “Sleeping Giant”, the island of Espiritu Santo is a diver’s Mecca. Within clear waters, along stunning reefs, view wrecks from World War II, when 100,000 American troops were based here. Explore Million Dollar Point and SS President Coolidge, which sunk in 1942. Take a day trek into Santo’s interior via a 30-metre bamboo ladder lashed with vines that descends to a canopy of green. Discovery Millenium Cave – open-mouthed in a 15-metre yawn through which a dark, eerie tunnel extends almost a kilometre until you emerge into dazzling sunlight beside the Vantar River. Sheer walls are sculpted into magnificent shapes and waterfalls plummet spectacularly as you float along the freshwater canal. Pentecost is famous for its land diving ceremonies – forget elastic, this is the original bungy using vines and a less-thanscientifically-calculated tower from which to launch! It’s not for tourists, however, and you only get to watch this cultural rite of passage into male adulthood. On Tanna, Vanuatu’s “Island of Fire”, peer into Yasur’s molten heart and feel a deep rumble shudder from its depths. At night, be riveted by its sound and light show as embers fall around like glow-in-the dark confetti. Nearby, Tanna’s villagers shun modern comforts to live traditionally in simple palm woven huts. With more than 115 cultures and languages throughout its islands, a diverse range of activities on offer and top resorts, Vanuatu can easily become your personal paradise.

2 litres chicken stock (preferably organic) 12-16 threads good-quality saffron 100ml olive oil 150g good-quality chorizo, sliced into 3-4mm thick rounds

6 slices pancetta or streaky belly bacon 1 medium size onion, finely diced 4 cloves garlic, finely diced 1½ tsp smoked paprika 500g paella rice (see chef’s note)

in a pot heat the chicken stock and infuse with the saffron. Bring a large frying, sauté or paella pan up to heat, add the oil to the pan and quickly add the sliced chorizo and pancetta or bacon and fry until browned and crispy. Quality chorizo will always drop a red oil into the pan when cooked – this is a good thing as it is the combination of paprika and pork fat that has rendered out of the chorizo and adds flavour to the overall dish. add the onion and garlic and cook until soft. add the smoked paprika, rice and two-thirds of the infused stock, leave to cook on a medium to low heat, stirring from time to time. after 20 minutes the rice should be almost cooked. at this point, pour in the rest of the stock, and add the tomatos and mussels. place a lid on the pan and cook for 10 minutes more. Finally, sprinkle with chopped parsley and half a lemon.

Paella rice predominantly a shortgrain rice is used for this dish, but most food markets sell a paella rice. however, Valencia rice or Calasparra rice are considered the best options. Situated within the newly refurbished Woolston Club building, Whitford’s has a spacious dining area overlooking the manicured football fields of Garrick Park. The recently released winter menu is sure to satisfy anyone looking to stave off the cold with a hearty meal. On the brisk winter’s evening when I visited, I was tempted by the vegetable risotto, which was creamy and flavourful thanks to its key ingredient: roasted pumpkin. As you’d expect from an establishment with no less than five bars on the premises, Whitford’s has an extensive selection of drinks both by the glass and by the bottle, in addition to beer on tap. Operating under a club licence means the prices are friendly on the wallet, however, you will have to be a club member (or guest) to enjoy those benefits. Signing up is straightforward and can be done on the spot, and having reciprocity with all other clubs in the city, membership is extremely handy. Since renovations were completed last year, Whitford’s strives to impress with its superb range of culinary offerings, both sweet and savoury. The seasonal menus are tailored to the elements, with heartier dishes served in the colder months. We couldn’t get enough of the delicious black plum and white chocolate steamed pudding, which our waiter mentioned is the most popular dessert on the menu. I found myself devouring every last crumb from the cappuccino mug in which it was served. If you’re looking to combat the cabin fever that comes with the long cold nights over the coming months, Whitford’s promises to deliver all that is needed for an exceptional evening out with good company.

SenSationaL SUV Ross Kiddie looks over the popular Lexus RX350.

Don’t be at all surprised if an SUV is the 2016 top-selling vehicle amidst the comprehensive Lexus line-up. Lexus New Zealand is anticipating that result as the company actively cashes in on the popular sport utility market. Not counting the Land Cruiser-based LX, there are two SUV models in the Lexus range, the NX and RX. Both would be considered genuine five-seater models; however, the RX is the bigger of the two and it is a full-size wagon at almost 4.9m, and sitting tall at almost 1.7m. And within the RX range there are many choices – mostly in specification, but you can also opt for hybrid power if you so wish. For 2016 the RX is completely new. It is fresh both inside and out, and incorporates a host of new technologies especially for safety. As its nomenclature suggests, the RX350 has a 3.5-litre V6 petrol-fuelled engine. It is a powerful unit at 221kW and 370Nm and it drives through an eight-speed automatic transmission. Even though it is an engine that has been used widely throughout a raft of Toyota (and Lexus) product, it has had a power boost in RX form;

consequently, it stands out for its strength and performance, along with respectable fuel-usage statistics. Lexus claims a 9.6-litre per 100km (29mpg) combined cycle average. I had two long, open-road drives in the evaluation car and I found that figure easy to replicate with a 10.2-litre (27mpg) figure showing on the fuel usage readout. At 100km/h, 7.5l/100km (38mpg) is possible with the engine turning over at just 1600rpm. And that is the secret to this big V6. It works tirelessly low down, hauling in quick shifts before the revs rise unnecessarily high. That is the beauty of the V6 engine, it has good torque flow yet whisks to high revolutions freely if required – when overtaking for example. The RX has an economy/normal/sport selector so that the driver can dictate how the engine works depending on preference. I used normal mode mostly, but did try the sport setting, which is great for providing overtaking opportunities. The RX will lunge from 80km/h to 120km/h in around 4sec, along with a standstill to 100km/h time of 7.8sec. when it is hauling in towards the 6300rpm red line. I guess you’d expect that in a prestige/luxury car, and it doesn’t disappoint. And the sophistication within the driveline doesn’t stop there. The RX has a complex, fully independent suspension system, and it carries drive to all four wheels. even though it has a generous 200mm of ground clearance, the RX can’t be considered an offroader – put simply luxury sUVs aren’t aimed for those conditions – but the four-wheel-drive system is there for when grip is challenged. I never ventured off the sealed surface, but I can also report that four-wheel-drive, in the RX’s case, is there to enhance its position on the seal, promoting a secure handling feel when pushed into a corner. While the RX has performance that sits well in the sport sUV sector its primary role is to transport its occupants in the Lexus style of luxury and grace. It is a full five-seater with full leather trim, sat nav, heated and cooled seats, and most of the functions you would need every day as a premium car buyer. The evaluation car was entry-level, but it certainly doesn’t miss out on much. sure, it doesn’t get all of the trick stuff of its high specification stablemates, but then again it doesn’t need to in order to provide a satisfying driving experience. I’ve written many times recently that cars without the full kit are far more appealing to me, but I felt right at home in the RX350 in this form. It still gets the specification to justify its $95,900 price tag. Incidentally, the V6-only range tops out at $107,900, while the V6/ hybrid models list from $114,900 to $125,900. I’m often asked what car I would buy if I had easy access to money. I never really commit myself to answer that question as there is just so much to choose from in the market place that I like. however, I often answer by saying I like Lexus product, simply because the range is beautifully built, easy to drive, and so vast there is something for all buyer profiles. I’d love to have a drive in the 450h, its V6/hybrid combination sounds tantalising. That aside, the RX350 has done nothing to change my opinion of the brand. It is an involving drive yet a vehicle that equips itself well in so many ways.

Frobisher Wine and Whisky evening The evening setting sun streamed through the window to shimmer off the cutlery and plates set for the night. Dinner was up at Frobisher and what a treat was in store for guests. To compliment, the delicacies, a selection of the finest wine and whisky were presented. Welcomed with a cocktail, invitees mingled and chatted before being called to the tables placed among the indoor garden display and excellent furnishings. Candles carried the gold of twilight on into the night as courses and glasses came then went, the appreciation evident. The gym at St Andrew’s College threw off the usual rambunctious atmosphere associated with sport, to don the most genteel cloak of glamour. Spotlights glinted off a mirrored spinning sphere, hurling gems of colour about the hall. The Mother of all Virtues: Gratitude “Feeling gratitude and not expressing it is like wrapping a present and not giving it” – William Arthur Ward Over the last two months, I have been graced with gratitude in all senses of the word, from a vibrant palette of colleagues, friends and professionals. Since I was a young child, I have always been a true believer in the importance of taking the time to thank others for kind and thoughtful gestures made, returning that wonderful warm light, which filled you with joy you expressed through a genuinely happy smile. In my eyes, any moment someone takes time out of their precious day to stop and acknowledge you is simply priceless. After all, time is the most valuable commodity we have. When we encounter challenges and problems in our lives, it is often difficult for us to focus on our blessings. However, if we reach deep enough and look hard enough, we will be able to feel and recognise just how much we have.

So, how do we bring gratitude into everyday living? There are a lot of books and websites out there; people have built small empires on spreading the word of gratitude. Social media is immersed in positive quotes for the day and quick-fix information pieces to instruct and inspire. From me to you, I’m going to keep it simple. Gratitude attitude: start on a Monday and finish on Friday. Buy yourself a little notebook. Paper – old fashioned? In this case, no! Have a page for each day. Divide each page into thirds. Label the first ‘Morning’, the second ‘Afternoon’, and the last ‘Done’. How will it work? Make at least one entry under ‘Morning’ and ‘Afternoon’ with what you are grateful for and, under ‘Done’, state who you have shown gratefulness to and why. Here is an example: ‘Morning’ – I am so grateful for my morning drives to work from the country, listening to my favourite music and daydreaming of the future; Afternoon – I

am so blessed I have a partner who takes time out of his busy day to text, “I love you x”. Done – Jane Seymour always waters my plants without me asking. Today, I bought her spring flowers to show my appreciation. She was overwhelmed. The entries need not be an essay, just simply a recording of the emotion or action. At the end of the week, look back through and absorb that feeling you have while reading. The sense of gratitude with, possibly, your new-found attitude. My sincere, heartfelt wish is that we may, in our individual lives, reflect that beautiful virtue of gratitude, so that it may fill our lives and those we love and cherish. If you think it, say it!
